About TAJA – Fresh, Non-Pasteurized, Coconut Water

Our mission at TAJA is for everyone to taste coconut water as nature intended it — fresh, green, tender, straight from the tree. So, we needed to transfer the water from young tender coconuts directly into a bottle. This was challenging given the physical, chemical and biological changes post-harvest. We devised a unique method that harnesses the freshness without unwanted changes.

We work with local coconut tree farmers to help neutralize and improve soil conditions. This allows the coconuts to receive more hydration which, in turn, creates better-tasting, more-wholesome coconut water. Our team hand selects the perfect coconuts based on three criteria:

Soil that supports optimal hydration
Coconut water natural sugar in balance with natural acidity
The perfect aroma – where more aroma equals tastier, healthier coconuts

We harvest green, tender coconuts at the 90-day mark, the ideal time

to maximize nutrients and hydration properties.

Once harvested, our coconuts are sent straight to our factory for extraction. during which we penetrate the coconut shell with a probe and inject nitrogen gas under pressure, flushing the coconut water into an oxygen free vessel. Then, we bottle the coconut water using our patented, cold-filtering process.

Our patented cold-filtering technology sterilizes clarified juices in the absence of oxygen, without heating the product or adding preservatives. The absence of oxygen and heat, prevents the coconut water from physiochemical changes that alter its original color, nutrients and taste. Most importantly, it makes the coconut water safe to drink without degrading its nutritional components. The result? The freshest tasting coconut water, just like directly from the tree!

In additional to our sustainable harvesting and patented process, we are mindful of the ecosystem. Our bottle was designed with sustainability in mind and is 100% fully recyclable. And, post juice extraction, we grind the remaining coconut husks into a compost for use in hydroponics. That’s how we like to give back to nature!
